Cheese production line 9000 tons per year

Fully automatic cheese production line for semi-hard cheese (block 30 x 30 cm = 1 cheese per mould, cylinder ø 20 cm = 4 cheeses per multi-mould and cylinder ø 25 cm = 2 cheeses per multi-mould, adaptable to Euroblok 30 x 50 cm).

With a production capacity of 9.000 tons per year.

Layout of the cheese production department:

  1. Pre-press (app. 1.300 – 1.400 kg per batch)
  2. Mold filling station
  3. Cheesemark applicator
  4. Buffer station molds + lids
  5. Final presses (2 pcs x 3 lanes x 25 (multi) molds = total 150 (multi) moulds)
  6. Member remover/ pickup
  7. Demoulding into “holding” molds (for ripening and lowering of the pH)
  8. Washing molds + lids
  9. Buffer station “holding” moulds
  10. Holding towers
  11. demoulding
  12. Washing holding moulds

Layout of the brine department:

    1. In floating of the cheeses in the brine racks
    2. brine containers
    3. Out floating of the cheeses
    4. Cleaning station of the brine racks
    5. Placing the cheeses on wooden shelves
    6. Overhead crane (manually operated)

      Curd Production Department

      The production line also has a special department for curd production. This department contains 3 KALT barrels with a capacity of 12.000 – 13.000 litres. Two of these kegs were made in 2001 and the third in 2009. The kegs are operated by the middle of a Siemens S7 control panel.
